Stir fry recipes for sauces

FRY is an old ancient cooking dishes that are known to be very fast and easy. It is fast, it is also economically when utilizing fuel is concerned. But FRY dishes has come to popularity because of its ability to keep the flavors of protein and vegetables in it. These flavors together somehow to bring up this amazing flavor of Oriental cuisine. But secretly, Chinese dishes depends on their recipes for sauces that are a mixture of several herbs and Oriental sauces which compliments any stir fry recipes. Here are some Chinese recipes on stir fry sauces that you can try at home.

1. CHINESE PLUM SAUCE:

Ingredients:

3 pounds plum

2 pounds peaches

3 sweet red peppers, diced

4 large garlic cloves, chopped

1 onion, chopped

4 cups apple cider vinegar

a ½ cups of water

½ Cup cooking sherry

1 tsp soy sauce

1 ½ cup white sugar

a ½ cup packed light brown sugar

1 tablespoon ground ginger

a tablespoon of pickling salt

1 tablespoon dry mustard powder

one teaspoon cayenne pepper

a teaspoon of cinnamon

1 tsp cardamom

PROCEDURE:

Steam or blanch the plums and peaches for about 2 minutes, makes only 1 pound at a time. Do not overcrowd the pan. Skin and remove pits.

Another large kettle, you can combine all of the ingredients. Bring the kettle to a boil and then reduce heat to simmer for another 1 ½ to 2 hours, until the fruit falls apart and the syrup is quite thick enough. Please stir them frequently to avoid scorching or burning.

Pour the puree into a hot ½ pint jars leaving ½ inch head space, and then seal and process in a boiling water bath for 10 minutes. Remove the jars from the bath and coolness when cold out, you can store them in the fridge and they will last until you close them to the last drop.

2. the CHINESE SZECHUAN STIR FRY SAUCE:

Ingredients:

â½ tsp sesame oil

½ teaspoon chopped fresh ginger

½ teaspoon minced garlic

1/3 cup chicken broth

2 whole star anise

1 ½ tsp red wine vinegar

a tablespoon of soy sauce

½ tsp salt

one teaspoon hoisin sauce

1/8 teaspoon Tabasco sauce

1/8 teaspoon red pepper flakes, crush them into pieces

¼ TSP pepper

1/8 teaspoon 5-spice powder

a tablespoon of water with dissolved 2 tsp cornstarch

PROCEDURE:

Heat the oil in a small saucepan. Add the ginger and garlic and cook for about 12 minutes, until softened but not brown. In another bowl, combine remaining ingredients, save the cornstarch mixture for later. Add them to the saucepan and bring to a simmer, covered, for about 10 minutes. Remove star anise. Whisk in cornstarch mixture and let it cook for another 1 to 2 minutes. Taste and add more Tabasco of the desired. This is now ready for any stir fry cooking.
